That's happened because the feed(s) from which that category has come from has apostrophe characters encoded as the HTML entity ' (the &, # and semi-colon removed via normalisation). The tidiest way to handle this is to use a Search and Replace filter on the Category field on any feed containing this category using
Search: '
Replace: '
Don't forget to re-import all affected feeds for the changes to take effect.
